I've set the autolock vault timer to 'Never'. Still, every time I close my browser/restart my PC, the vault is locked (both the browser extension and the App).

When you restart your computer, the safe will actually be locked again because the application itself (as well as the operating system) is completely shut down.

I performed a test on my machine and set the Auto-Lock to "Never" and it is working normally.

Try reinstalling the product by installing the most up-to-date version (here) and/or change this option again so that the new settings are saved (maybe there was a bug when saving the settings)
