I've looked through the documentation for Kaspersky for MimeSweeper and it only mentions that it will/can scan inbound/outbound or both emails that enter the system. But what it doesn't mention is whether it also protects the server itself.

Therefore, my question to anyone who can help, please, is does it protect the server also, or do we need to specifically install Kaspersky for Servers?

No, for servers you will need Kaspersky for file servers. Kaspersky for MimeSweeper is a product to integrate with Clearswift MIMEsweeper for scanning and disinfection of incoming and outgoing traffic in real time.
