If I want to exclude a file from the real time protection, do I simply uncheck it in the KAV MMC Console > Real Time Protection > Real Time File Protection area? Or do I actually have to go into settings and then performance, and enable the exclusions there?

Same goes for network drives. I see I can uncheck "Network places" but I do not know if I have to specifically exclude the drives, or just uncheck "Network places" in the same area mentioned above.

Thank you!

Also, can I be emailed a report whenever a virus is detected?

Read this FAQ about exclusions.

If you use the AdminKit you can configure an email alert.

You can also use notifications functionality which is included in the WSEE itself. In the management console call for context menu on node 'Kaspersky Anti-Virus' and select 'Notifications...' Please see more detailed description of this functionality in the context help or user manual.

Yes, the simplest way would be to uncheck this file in the RTP settings (uncheck the corresponding node in the 'TreeView mode' or add an exclusion in the 'ListView mode'). You can also add an exclusion rule to the Trusted Zone settings if you don't want to mess up the settings.

You don't have to exclude the individual drives, unchecking the 'Network places' node will do. But please note that unchecking this node tells the RTP to ignore all network activity and therefore could be a source of infection.
